Karanji is a sweet dumpling that is prepared from maida flour or suji or wheat flour and get stuffed with khoya. It is very common in North India particularly in Uttar Pradesh, Bihar, Rajasthan and Madhya Pradesh. The packaging of Karanji is almost similar to that of samosa but it has a distinctive shape from samosa. The Karanji is filled with the mixture of roasted and grated dry fruits, coconuts, khoya and suji to add the little grainy texture to the sweet. Karanji is called Purukiya in Bihar and these are relished by everyone in Bihar. These are made with suji, ghee, cashew, sugar, grated coconut, raisins, cardamom and various other nuts.
